Chocolate Peanut Ice Cream (David Leibovitz)

Ingredients

Cream 20% 500 ml
Cocoa 25 g
Sugar 100 g
Peanut paste 130 g
Salt Pinch

Cooking method

  • A very simple recipe with great results:
  • Combine cream, cocoa powder, sugar and salt. Bring to a boil, stirring occasionally. When foam starts to rise, remove from heat and stir in peanut butter until smooth and smooth.
  • Cool the mixture (I covered it with a foil in contact), and freeze it in an ice maker.
  • The result is a moderately sweet chocolate ice cream with a distinct taste of peanut butter.
  • The original recipe uses not 20% cream, but half-and-half: a mixture of milk and heavy cream, 11-18% fat. I usually replace this mixture with 20% cream in Leibovitz recipes.
