Natural blueberries in their own juice

BLUEBERRY - fruits of the same name wild-growing food shrub 15-40 cm high with a long creeping rhizome, sharp-ribbed twigs, finely serrate-toothed leaves and single greenish-white flowers. The berries are spherical, black-blue, with a bluish waxy coating, with a delicate juicy purple pulp of a pleasant L sweet taste. Distributed in Eurasia and North America; in Russia in the European part, in the Caucasus, in Western and Eastern Siberia and in the Far East. Grows in pine and mixed forests, as well as in the tundra, sometimes forming continuous thickets. Blueberries ripen in July-August. Ripe berries contain sugar, organic acids, vitamins C, Bi, B2, PP, carotene, minerals, flavonoids, pectin and tannins.

Blueberries are best known as a medicinal berry, from which jelly is prepared, which are especially useful for certain gastric diseases (intestinal disorders, gastritis); fresh berries, on the contrary, have a laxative effect. Blueberries and a decoction of their leaves are especially recommended for diabetes.

Blueberry jam, blueberry puree, blueberry juice, jelly, compote, jam, syrup are good. Residents of the northern regions believe that pie, cheesecakes, pies and dumplings with blueberries are tastier than the same products with any other sweet filling. And fresh large blueberries sprinkled with powdered sugar are very tasty.

Blueberries are also dried and used for jelly and compotes. The berries are picked during the full ripening period. When picking blueberries, twigs should not be plucked, since damaged plants will grow back and begin to bear fruit only after 7-8 years or more, while undamaged plants bear fruit every 4 years.

Checkmark, thanks! We now have a lot of blueberries, I don’t want to cook jam, but without sugar, natural, I will definitely cook!

Zhenya, cook for your health! This recipe was taught to me in the difficult 90s by a village woman. Then such preparation of blueberries was exactly what attracted me by the lack of sugar, which was simply too expensive. Since then, he has never let me down.
Rarerka
Ooooooo! I didn’t understand, what is it, right without sugar and can it be stored for so long? Nichyosi!
The question is ripe, but can only blueberries be harvested in such a way, or will something else also be stored like this? There are no blueberries, maybe what else will you get at least
Great recipe, Galin!
gala10
Lyudochka, thanks! Yes, no sugar at all. And it is stored in the apartment for a long time. As for other berries - I don't know, I haven't tried it.
Victory

When the last juice appears
Galina, what does this mean? How do I know this is the last juice? Now we should bring blueberries, I want to try to make it according to your recipe.

And another question: should the ink be absolutely dry? Or can you rinse, drain the water in a colander?
gala10
Jeanne, blueberries release juice as they heat up. Here is the juice from the last layer and there is the last one. This is when there is nowhere to add new blueberries.
I pick the blueberries myself, so I have them dry. Forest berries are not washed at the NSA at all. But if I bought, I would definitely wash and dry. The jar must be placed dry.
Jeanne44
Galina, thank you very much for the quick response! I just went through the blueberries, washed them. I'll put it on a towel to dry. I tried a berry - sour for my taste. And if I add sugar to a 0.5-liter jar 3-4 tablespoons. spoons - won't spoil? Will the berries stand at room temperature?

Galina, excuse the importunity, but I probably digested the berries. I waited for the juice to cover the topmost layer of berries, but I didn’t wait, I poured 1 tsp on top. sugar, kept it on the fire for 5 minutes and rolled up the jar. The berries stopped settling for a long time, probably then it was necessary to roll up? Now I looked at the main photo - you, too, are not covered with juice to the top. I'm right? Help to do "correcting mistakes"! And thanks for the recipe!
gala10
Jeanne, yes, the juice from the last layer does not completely cover the blueberries. The berries have stopped settling, which means you can roll up. Then, after all, the jar must be turned over onto the lid and everything will be evenly in the juice. In the photo I have - even BEFORE turning over.
I can't say anything about sugar. Never added. Ready-made canned food is never too sour. It just tastes like a natural berry.
Jeanne44
Thank you! I probably tortured you with questions.
But ... this morning I found foam ... I guess it's all about the raw materials. The berries were picked for me on Saturday and Sunday. They arrived on Monday evening. The jar was kept in the refrigerator. But you probably need to take freshly picked berries for this recipe. Dry and undamaged.
Galina, is there any hope that the berries will remain in the bank? Have not encountered this:

Jeanne, I have never had foam. I think it's from sugar. And I didn't wash the berries, because I picked it myself. Probably the berries were not very well dried + sugar. I think that such canned food will not be stored.

Venka
gala10, and then how to use the berries? They are completely out of shape, right? And not too watery taste and consistency will be if taken as a filling in pies?
gala10
Venka, the berries are then almost like natural. You can just eat it with a spoon, you can cook jelly, you can use it in pies, only then add starch to them so that the filling does not flow. No, they are not watery at all.
