Ingredients

Dough:
dry yeast 3 g
wheat flour of the 1st or highest grade 300 g
water 120 g
egg 40 g
apricot or apple jam 60 g
salt 4 g
vegetable oil 35 g
For finishing:
egg 15 g
poppy 1 tbsp. l

Cooking method

  • Challah FruitMix flour (1 tbsp. L leave) with yeast. Add egg and jam, pour in water.
  • Challah FruitKnead for 8-10 minutes. Add salt, oil and remaining flour.
  • Knead a soft, silky dough.
  • Challah FruitTighten the container with the dough with a film, put it in the refrigerator for fermentation for 10-12 hours.
  • Challah FruitAllow the dough to warm up at room temperature for one and a half hours before cutting.
  • Divide the dough into the desired number of pieces. Roll each piece thinly, roll into a roll. Let the rolls rest for 10 minutes, then roll them on the table, lengthening.
  • Shape the challah.
  • Challah FruitTransfer to a baking sheet, cover with loose foil. Proof at room temperature for about an hour.
  • Challah FruitBefore sending to the oven, grease the challah with an egg, sprinkle with poppy seeds.
  • Bake in an oven preheated to 230C (convection 210C) degrees, with steam for the first 6-7 minutes. Then lower the temperature to 190C (convection 170C) degrees and bring the bread to readiness.
