Ingredients

fermented baked milk (natural yogurt, low-fat kefir) 60 grams
eggs s-1 2 pieces
pitted dates 40 grams
nut flour (cedar, peanut, coconut, almond) 60 grams
defatted cocoa powder 10 grams
skimmed milk powder 30 grams
milk 0.5% 50 grams
any sugar substitute optional
vanillin, flavor optional
salt on the tip of a knife
nuts / crumb / cocoa - for sprinkling optional

Cooking method

  • If the dates are dry, soak in hot water.
  • Then drain the water.
  • Divide the eggs into yolks and whites.
  • Mix fermented baked milk and yolks. Add dates, beat with a blender.
  • If you do it immersed, you need to beat it in a high container, otherwise it flies to the sides.
  • Add flour, mix well.
  • Beat the whites with salt with a mixer until a strong foam. Gently introduce into the mass with movements from bottom to top.
  • Cover the baking sheet with parchment or a silicone mat.
  • Spread the dough evenly with a spatula. Layer thickness 3-5 mm.
  • Bake in an oven preheated to 200 degrees for about 20 minutes. Willingness to test with a stick.
  • Take out the baking sheet with the baked crust, cool slightly, then break into small pieces.
  • Switch off the oven.
  • Put the baking sheet back in the oven and dry the pieces.
  • Then grind. No need for flour at all. I just crushed it with a wooden crush.
  • Cool down.
  • While the crumb is cooling, make a chocolate cream.
  • Mix COM and cocoa. Pour in a little milk and mix thoroughly with a spatula.
  • It is necessary to stir until the milk powder is completely dissolved. Add sakhzam to taste and vanillin or flavor (I added 2 drops of Almond flavor).
  • Then add the crumb to the cream, in parts. Stir well every time.
  • The finished mass is dense, plastic.
  • Pinch off pieces of walnut and roll balls with your hands.
  • Ready-made cakes can be rolled in cocoa, crumbs (then set aside a little), chopped nuts.
  • Refrigerate.
