Why is the salad called that? I do not know. This name was in the author's version. But I liked it and I left it.
The salad turned out to be insanely tasty (I repeat)! Exquisite and sophisticated in French! The hardness and astringency of the pear intertwined with the barely noticeable pungency and salinity of the cheese, added the sweetness of beets, slipped the piquancy of arugula, added the delicacy of pine nuts, and all this was shaded by the light acid of the dressing. Just a fountain of tastes !!! And they do not shade each other, do not interrupt, but they complement each other! a very subtle and well-chosen combination of components.
I am new to French cuisine, but I associate it with this particular salad. Refinement, lightness, sophistication, beauty, brightness of colors and ingredients, taste and ease of preparation. Maybe I'm wrong about French cuisine ...
The salad is very light and looks bright on the table.
But I want to draw your attention to the fact that a lot in his taste depends on the cutting !!! I would not advise cutting it into small pieces, with the usual "cubes" or, God forbid, grate it. All the refinement of taste and beauty will be lost. There will be the usual "salad porridge" from poorly combined products. And here, each piece, falling on the tongue, brings its own taste, and only their interweaving gives you the real sophistication of the dish.
Nuts can be replaced with others, too, it will be good, I think. Just don't overdo it! So that the taste of nuts does not dominate!
Arugula can be substituted for any other leafy salad. But the peculiar taste of arugula here gives a special touch to the salad.
In general, try to do it and it seems to me that you will not regret it! Or maybe you will imagine France, slender French women, a small bistro on a cozy Parisian street and a smiling cafe owner serving you this salad ...

I am making additions. I made this salad again today. There was no more arugula, I put the usual Oakolistny salad. Quite ... but still more refined and tastier with arugula.
I decided to make more dressings (well, so that it would be better saturated with sauce!). Do not repeat my mistake in any way !!!! Or reduce the vinegar (the rest can be left. Although you don't need a lot of them).

I even removed 1 teaspoon of vinegar from the ingredients



vinegar acid ruined the whole picture of taste !!
The sophistication and fountain of salad taste have been lost. Acid dominated. Ate, of course, but that delight ...was gone! T h - do not increase the dressing (just moisten the salad with it a little) and do not fill it in advance! Just before serving!
