Gray bread (Jasques Mahou)

Ingredients

pressed yeast 5.3 g
wheat flour of the highest grade 340 g
wallpaper rye flour 40 g
semolina flour (semolina grade 10 g
water 260 g
salt 10 g

Cooking method

  • Gray bread (Jasques Mahou)Grind yeast with your fingertips with wheat flour, add rye flour and grains (I have semolina from durum wheat), pour in water. Knead a soft, slightly sticky dough. 5 minutes before the end of the kneading, add salt to the dough.
  • Gray bread (Jasques Mahou)Fermentation for 45 minutes at room temperature.
  • Gray bread (Jasques Mahou)Knead the dough, divide into 2-3 parts. Roll each of the parts into a ball, cover with foil. Leave for preliminary proofing for 20 minutes.

  • Gray bread (Jasques Mahou)Proof at room temperature for 45 minutes. (in the original recipe, the author suggests proving in a proofing basket sprinkled with seeded rye flour).
  • Gray bread (Jasques Mahou)Before sending to the oven, make cuts on the TK.
  • Gray bread (Jasques Mahou)Bake bread in an oven preheated to 230C* (convection 210C) degrees, with steam for 10 minutes, then reduce the temperature to 190C (convection 170C) degrees and bring the bread to readiness.

Note

* The author recommends to start baking bread from 250C degrees (and baking) and bring it to readiness at a temperature of 210C degrees. But the girls who baked bread turned out to be too "tanned". I recommend you focus on the features of your oven when choosing a temperature regime!
