Ingredients

classic mayonnaise 1-1.5 tbsp. l.
sugar 1 tbsp. l.
salt 1/3 tsp
water or milk 100 g
vodka 1.5-2 tbsp. l.
premium wheat flour of necessity
vanillin or vanilla sugar optional
Additionally:
vegetable oil for frying
powdered sugar taste

Cooking method

  • Pour water into the bowl, add mayonnaise, sugar and salt, if desired, add a little vanillin or vanilla sugar, mix all the ingredients with a whisk until the sugar dissolves. Add vodka, stir, and adding flour knead a smooth dough that does not stick to hands and work surface, slightly softer in density than you usually knead for "brushwood".
  • Roll out the dough into a thin layer approximately 1 mm thick. When cutting strips for cookies, make the length shorter than you plan, by a couple of centimeters, since the dough will still stretch well during molding, which will increase the fragility of the finished cookie.
  • Fry TK in well-heated vegetable oil until golden brown, spreading the finished cookies on paper napkins to remove excess oil. Sprinkle icing sugar on the cookies that are still warm, and after cooling completely, sprinkle with powdered sugar again.
  • The "brushwood" is brittle, crunchy, crumbly and airy; biscuits cooked in milk will have a denser structure.

The amount of flour depends very much on the quality of the mayonnaise, regardless of the brand of the manufacturer (the same brand, but different batches can give a different amount of added flour). Next time I cook, I'll use a scale to check the amount of flour.

When preparing cookies, it would be good to add some kind of flavoring, vanillin or cinnamon, since depending on the formulation of the used mayonnaise, there may be a residual odor in the main flavor of the cookie, it does not affect the taste. In structure, the "brushwood" is closer to the light version of the chip type than to the shortbread version, and if you prefer the second option, knead the dough in milk and add more flour.

Amaretto has a spice in its taste, it is difficult to imagine how it will behave when combined with mayonnaise and subsequent heat treatment.
