Wheat 100% Whole Grain German Bread

Category: Yeast bread

Ingredients

Light Whole Wheat Flour3 3/4 cups
White bread flour3 tbsp. l.
Water1 1/2 cups
Salt1 1/2 tsp
Unsalted butter2 tbsp. l.
Yeast for bread maker2 1/4 tsp
Gluten (I did without it)1 1/2 tbsp. l.
Powdered milk2 tbsp. l.
Syrup
(I blurted out some leavened wort, but this, of course, is not the same)
3 tbsp. l.

Cooking method

  • Add the ingredients to the machine in the order recommended by the manufacturer of your bread maker. If your machine has a whole grain dough kneading mode, select it. Otherwise, knead the dough in the usual "Dough" mode and, after waiting for the end of kneading, start it again immediately on the "Basic" or "Whole Grain" mode (if any).

I tried it. Successfully!
It turned out very tasty, so we ate it and didn't have time to take a picture
The roof fell a little, probably it is worth pouring a little less water.
Made with buckwheat honey instead of molasses and with panifarin.

I recommend it to everyone, Luca - thanks for the recipe!

Assuming that your cup is 240 ml = 150 grams of millet. flour? Or is the weight different with whole grain flour?
