Butter cake in a hurry (adaptation)

Ingredients

Wheat flour 300-320 g
Butter 170 g
Medium egg (C2) 3 pcs.
Sugar 1 tbsp. l.
Vanilla sugar (20g) 1 pack.
Milk 40 ml
Salt 0.5 tsp
Dry yeast (SAF, Oetiker, etc.) 1.5 tsp.
Raisins white 0.5 tbsp.
Candied fruits (finely chopped) 2 tbsp. l.
Glaze on the cap:
Egg (protein only) 1 PC.
Powdered sugar 150 g
Lemon juice (optional) 0.2 tsp
Cocoa powder (if you want a light brown cream) 0.3 tsp

Cooking method

  • Cooking procedure:
  • - heat the milk for 15-20 seconds in the microwave, pour it into a bucket, pour yeast on top
  • - dissolve butter in a water bath or microwave to a liquid state and pour on top of milk
  • - drive eggs into the bucket, pierce the yolks
  • - sift flour (~ 300 g), add the rest when kneading, if necessary
  • - in the corners - salt, vanilla sugar, sugar (if there is no vanilla sugar - put 2 tablespoons of ordinary sugar and on the tip of a knife vanilla or cinnamon, who likes what more)
  • - we select the mode on the HP: sweet bread / baking (mostly it infects the crust very strongly (it is visible below on the unsuccessful option), the crust is light, the whole is 500-600 gr.
  • - while the HP kneads the dough, cut the candied fruits (if you have large ones) and soak the raisins in boiling water for 5-6 minutes, then drain and put them on a paper towel to dry
  • - at the signal of HP, add raisins and candied fruits. In the process of kneading, we check how the bun behaves: it must be elastic - when the scapula stops, it starts to blur, if the bun is watery, add a teaspoon of flour, 2-3 is usually enough.
  • - after the end of the program, carefully take out the bucket and let it stand for 5-6 minutes, then gently take the cake out on hand. No matter how hard I tried, I still crushed the cap (in the last photo you can see it in the section). Let it cool slightly and make the glaze (there is a test version in the photo, I haven't made the glaze yet) and decorate ...
  • I caught sight of the recipe for butter cake in the oven - everything seems to be simple, but in HP it does not work - it falls through and is very fatty, it shines straight (the test version was eaten hot):

  • The roof bulged slightly and burst, rose almost under the cover of the HP. It looks shiny, oily. Taste - not very sweet, rich, crumb texture is delicate and even. The cut shows that the raisins and candied fruits did not fall to the bottom (in the basic recipe there were a layer below):

A spoon is needed for yeast - otherwise the rise will not be normal, yeast loves sugar for activity.
About HP and oven:
- the color in HP strongly depends on the program. In HP, the test was on the usual program, it turned out to be dark, and the final one was on the sweet bread mode. Face color difference
- for baking - the original recipe from the oven (not from the forum) in the KhP fell through until the flour was counted, apparently there is a drop of difference
