Ingredients

Cream cheese (like Philadelphia, Almente) 400 g
Cream (35% 100 + 50) 150 ml
White chocolate 75 g
Cognac (optional) 1 tbsp. l.
Lemon zest 1 tsp
Vanilla 1 g
Wheat flour 300 g
Baking powder 1 tbsp. l.
Chicken egg (large, room temperature) 4 things.
Powdered sugar (250 + 200) 450 g
Raisins 100 g
Lemon juice 3 tbsp. l.
Almonds (crumb) 40 g

Cooking method

  • I saw this recipe for those who for some reason cannot bake a cake from yeast dough on one of the Italian culinary sites and slightly adapted it to my taste. It is easy to prepare, the product is accessible, the result is excellent - airy, slightly damp dough inside, and on top there is a crispy crust covered with almonds and sweet and sour glaze, I recommend!
  • Quick Easter cake without yeast Beat the cream cheese with 100 ml of cream. Heat 50 ml of cream and melt the chopped chocolate in it. Add melted chocolate, vanilla and cognac to the cheese mixture and beat well.
  • Quick Easter cake without yeast Beat the eggs until the volume doubles and, without ceasing to beat, add powdered sugar 250 g. Beat for at least 10 minutes. Combine the cheese and egg masses, beat on the 1st mixer speed. Add zest and stir.
    Quick Easter cake without yeast In 2-3 doses, add flour sifted with baking powder, mix with a spatula, and then quickly beat with a mixer at 1st speed. The finished dough flows off the shoulder with ribbons.
  • Dip the raisins in 1 tbsp. l. flour and combine with the dough.
    Quick Easter cake without yeast Place the dough in a mold 24 cm in diameter, I have it with a pipe, but it is possible without it, well greased with MARGARINE !!! and sprinkled with flour, filling 2/3.
  • PS Since I used the pipe mold, I got 3 more Easter cakes!

  • Gradually add lemon juice to powdered sugar 200 g, carefully rubbing the mixture with a spoon. Pour the icing on the cake, placing it on the wire rack and spreading baking paper down. Sprinkle with toasted almonds.

    Quick Easter cake without yeast PS The name of the recipe is Easter cake with mascarpone, because the original recipe used 500 g of Mascarpone, but given that not everyone can afford it, I replaced it with 400 g of Philadelphia (Almente) + 100 ml of cream. I added white chocolate, zest, vanilla and cognac on my own, replaced the chopped dark chocolate with raisins, and the egg white frosting with lemon. I am very pleased with the result. I think. that the recipe was simply created for those who work and do not have time, and also for those who like to cook quickly and are not very friendly with yeast dough. And then, it is very, very tasty, on the second day the dough is exactly the same, but until the third day the cake simply did not survive!

We have no problems with mascarpone in Russia, but Philadelphia has been gone for a very, very long time. Well, Almente is understandably everywhere.

Mascarpone is also expensive in Greece, the lowest price that I have seen, almost 2 euros for 200 grams, and cream cheese can be bought 2 times cheaper.

I baked in a Nordic form and, as it seemed to me, smeared well, but nevertheless, it stuck a little in places. This time I didn't cover it with chocolate, sprinkled it with powder, but I will definitely do it with chocolate. Extraordinary oh delicious!
