Puff pastry pie with beet tops, cottage cheese and boiled potatoes

Ingredients

For the test
Butter or margarine for baking 100 g
Sugar 1 tbsp. l.
Wheat flour 200 g
Egg 1 PC
Salt 1 tsp
Baking powder 1 tsp
Filling
Boiled beet tops 300 g
Cottage cheese 200 g
Boiled potatoes 1 PC
Egg 1 PC
Semolina 2 tbsp. l.
Salt, black pepper to taste
Lemon acid on the tip of a teaspoon

Cooking method

  • Knead the dough: margarine at room temperature (do not melt!) Beat with sugar, an egg and a pinch of salt, pour the sifted flour with baking powder in parts.
  • Put the dough in the refrigerator for 30 minutes.
  • Finely chop the beet tops, fill with cold water, add a little citric acid and set to stew for 20 minutes.
  • When the tops are ready, drain the broth through a colander (it will come in handy for botvinia *), add a scrambled egg, boiled and mashed potatoes, salt, black pepper, semolina and cottage cheese.
  • Stir well with a spoon so that it connects.
  • We put the dough in a baking dish, form the sides, put the filling in the dough form.
  • The sides should be about 0.5 cm higher than the filling, because the filling rises during baking.
  • Preheat the oven to 180C and put the pie there.
  • We bake for 40 - 45 minutes.
  • Cool it down.
  • When serving, sprinkle with finely chopped herbs for entourage and Bon appetit!
