Cooking method

    Blueberry marshmallowPour the mass into a bowl and start whisking at the highest speed for 1-2 minutes or until a temperature of 75 degrees. Add protein in three doses. Do not stop beating. Beat at the highest speed.
    Blueberry marshmallowAt first, nothing will happen, but as it cools, the mass will become thick and light. Will hold on to the whisk.
    Blueberry marshmallowThe temperature of the mass should be approximately 55 degrees.

I did it according to the recipe. Without glucose, replacing it with sugar, marshmallows are more stable and not moist.

This method allows you to make marshmallows from almost any puree without boiling and adding an apple.
