Sourdough chocolate cake (excess sourdough)

Ingredients

ripe (fed) leaven or leftovers 240 g
milk (whole - 2%) or concentrated 227 g
flour 240 g
sugar 300g
vegetable oil 300 g
vanilla extract 2 tsp
salt 1 tsp
soda* 1 1/2 tsp
cocoa powder (not alkalized) ** 64 g
instant coffee 1 tsp
big eggs 2 pcs

Cooking method

  • 1. Combine starter / starter / starter leftovers with milk and flour in a large bowl. Cover and leave at room temperature for 2-3 hours. (you can put it in the refrigerator at night). It is not at all necessary that the mass will bubble, but it may grow slightly.
  • 2. Preheat oven to 180. Grease a 22x33 cm pan.
  • 3. In another bowl, combine sugar, butter, vanilla, baking soda (or baking powder), cocoa and coffee. The mass will be grainy. Add eggs one at a time, beating well after each. The mass will now become smooth.
  • 4. Gently mix the two mixtures. Whisk the milk and flour starter into the chocolate in 4-5 steps. I did it with a little difficulty with a simple whisk. The mass will turn out to be smooth and glossy, like a liquid yeast dough.
  • This is how the two masses look side by side:

  • 5. Pour into prepared dish and bake for 30-40 minutes. (it took me 45)
  • 6. Cover the cake with your favorite icing, or simply sprinkle with powder.

Note

* about soda. It seemed to me that 1 spoon would be enough. But I haven't tried it. The second point, consider what kind of cocoa powder you have. if only alkalized is available, then instead of soda you need to put baking powder.

The beauty of this cake / pie is that we can use not only the leaven, but also the very part that we usually throw away

You are always welcome, but I was also interested in making something besides bread from excess sourdough. The most interesting thing is that it seems to be like porridge from an ax, that is, the sourdough is not at all important here, we also have soda / baking powder here, but nevertheless the cake is very interesting, and moderately moist and moderately fluffy. You can do it very calmly with a cake, smeared with sour cream and covered with glaze. I highly recommend giving it a try.

Good morning, you are always welcome. In connection with the heat, only 50% according to Bertina (in the refrigerator) survives for me. But the original recipe also does not indicate the moisture content of the sourdough, I think that in this case it is not so critical, since there is an additional lifting element: soda / baking powder.

Irina, I'm not at all like sourdough. My two died from the heat. So far, only 50% of Bertina lives because she lives in the refrigerator. You should be in the subject of leavening, it seems to be very easy to bring eternal rye (I didn't succeed). But usually, if you start and the stars add up, then in 4-5 days the sourdough will be ready for this cake.

Irina, Elena, my cupcake is still not the same as yours, there is no porous structure. Mine turned out to be "hammered" or something. There may be several reasons: the leaven is not very active, fatty butter or alkalized cocoa powder I took olive oil for frying (refined), instead of soda I added baking powder. Or maybe it was not necessary to go straight into the oven, because the starter culture stood in the refrigerator overnight, did not have time to warm up
In general, I will look for the cause of failure.

Olga, thanks for the report, as they say, negative experience is also an experience. To be honest, I really don't really know what could be the reason for the clogging, because the trick is that our leaven should not be super active, we just dispose of the leftovers here, it can be at its peak or in the decline ... in general strange. As for cold or not, I honestly did my word calmly right from the refrigerator several times precisely because I didn't want to wait 2-3 hours, it's easier for me in the cold for 8 hours and bake in the morning. I myself love olive oil in baking (the Mediterranean applies it), so you can't sin on it either. I think you should try soda next time, it looks like it was the lack of lifting power.

I baked today. Thanks for the recipe! The hand does not rise to throw away excess leaven. Now there is a great way to use it. There is a lot of dough, so I made small cupcakes from a part in muffin tins. The cupcake turned out to be very airy and tasty. With morning coffee - just a delight)
Regarding the fact that soda can be used less - I agree. Next time I'll put less.
