Zucchini and Blackberry Cupcake

Ingredients

egg C1 2 pcs.
vegetable oil b / s 120 ml.
sugar 110 g
vanilla sugar 15 g
zucchini 150 g
premium wheat flour 240 g + 1 tbsp. l.
salt 1/2 tsp
baking powder 1 tsp
soda 1/3 tsp
cinnamon 1.5 tsp.
blackberry 150 g

Cooking method

  • Zucchini and Blackberry CupcakeMix flour with cinnamon, baking soda, salt and baking powder.
    Zucchini and Blackberry CupcakeSprinkle blackberries with flour (1 tbsp. L) and mix gently.
    Zucchini and Blackberry CupcakeGrate the zucchini on a coarse grater.
    Zucchini and Blackberry CupcakePour oil into a bowl, release eggs. Add sugar, vanilla sugar (mine is with natural vanilla). Beat.
    Zucchini and Blackberry CupcakeAdd zucchini. Mix.
    Zucchini and Blackberry CupcakeSift the flour mixture.
    Zucchini and Blackberry CupcakeStir until combined.
    Zucchini and Blackberry CupcakeAdd blackberries.
    Zucchini and Blackberry CupcakeMix gently. The dough is thick.
    Zucchini and Blackberry CupcakePlace the dough in a greased and floured dish. Flatten. Put to bake in an oven preheated to 175 degrees.
    Zucchini and Blackberry CupcakeBake for 60-70 minutes. Willingness to check with a wooden skewer. Get it. Let stand in the form for 10 minutes and free from it. Leave to cool on a wire rack.

ang-kay, thanks a lot for the recipe. Yesterday I collected the last blackberries and sent them to this cupcake. Taking into account the fact that lately baking in sunflower oil somehow does not work out for me, this cake made me more than happy. Soft, juicy, and no oily, if I hadn't baked it myself, I wouldn't have believed that it was in sunflower oil. I made a photo report, but I'll post it later. Thanks again.
