The dough is excellent, flexible, rolls well and thinly. I did not knead it yet, afraid to develop gluten, but now I understand that rubberiness does not threaten such a dough, next time I will knead it well and roll it even thinner.

I had about 1/3 of the dough, after standing in the refrigerator, it came off with butter, I added flour and mixed well.
I put the filling raw: grated apple, raisins, walnuts and a little semolina for a bunch of syrup.
It turned out 4 delicious tubes, the dough remained crumbly, despite all my mockery of him. :-)
Now I will often use this wonderful recipe!

I have long dreamed of portraying puff tubes with protein cream at home, but, previously I complained, I didn’t work well with puff pastry, but it finally worked out! Cheers cheers!! :-)
First, I built a base for the tubes - I cut cardboard tubes from foil and cling film into two parts, wrapped them in foil, then cut the thinly rolled dough into narrow stripes and "bandaged" each tube into two or three layers of dough. Baked in the grill until full blush, removed the tubes from the base, cooled and stuffed them with cream. The result is excellent cakes, no worse than store ones!
Before that, I tried on two tubes without cream, baked them and smeared them with a mixture of protein and water while still hot and sprinkled them with sugar. It worked well too.

It took me exactly one and a half measuring glasses of flour, I took a little more liquid, about 75 ml each, 6 tubes and 6 more rolls with sweet filling came out of this amount almost according to the recipe (coarsely grated apples, sugar and a spoonful of semolina).
The dough is almost universal, and it comes with a sweet filling, and you can make samsa and wrap and bake a sausage. It is now my favorite! :-)
