Vegetable curry

Ingredients

peeled potatoes 500 BC
big carrots 1 PC.
turnip onion 1 PC.
Bulgarian pepper 1 PC.
cauliflower 400 BC
tomato 250 g
curry 1 tbsp. l.
spinach optional (I have frozen) 30 g
vegetable broth 300 ml.
salt taste
vegetable oil 2-3 st. l.

Cooking method

  • Vegetable curryCoarsely chop the potatoes. Carrots - in rings obliquely. Disassemble the cauliflower into inflorescences.
    Vegetable curryPut carrots and potatoes in boiling water. After boiling, boil for 10 minutes. Add cauliflower and simmer for 3-4 minutes.
    Vegetable curryThrow boiled vegetables in a colander. Keep the broth that turned out.
    Vegetable curryChop the onion finely and fry in vegetable oil.
    Vegetable curryAdd curry to the onion. Mix. Warm up for 20-30 seconds.
    Vegetable curryChop the tomatoes finely.
    Vegetable curryAdd them to the bow. Cook, stirring occasionally, until the tomatoes are smooth.
    Vegetable curryCut the pepper into rhombuses.
    Vegetable curryAdd all vegetables to sauté. Add the stock that you have saved. Salt. Mix. Cook for 10-15 minutes.
    Vegetable curryFinally, add any herbs or spinach. Mix.

Yum-dumb ... I'll try to cook this weekend. Only together with onions I will lay a kilo of chopped pork. Sorry, but we don't eat vegetarian dishes. Taboo!

Made with changes:
- my potato is genetically modified by a turtle (very tough), so I cooked it longer
- frozen cauliflower, because after freezing, immediately go to sautéing
- there was no spinach
- next time they asked for less curry (this is purely a matter of taste, I'll take into account)
- well, meat shmat with a bite - where without it))
In general, it is tasty and clean (I paralleled the sautéing on the stove with cooking in MV and defrosting cabbage in the oven - it was prepared in a moment).
