Ingredients

Corn flour, gr. 300
Flaxseed flour, gr. 100
Baking powder, tsp 1,5 - 2
Salt, tsp 1
Eggs, pcs. 2
Water ml not less than 500
Sunflower oil for lubrication

Cooking method

  • Breads, gluten-free
  • Mix the flour, add baking powder and salt, then eggs and water. Knead until liquid sour cream, let stand for 20-30 minutes.
  • We heat the waffle iron for about 5-7 minutes at full power, grease the molds with oil, pour the dough and bake for 15 minutes! (I grease the mold the first 2-3 times. Then I don’t grease it and the bread does not stick.

Why I actually call waffles bread - they turn out to be light, porous and go well with the first courses. With the addition of flaxseed flour, the waffles become similar to table gray bread, only without the characteristic rye sourness. After cooling completely, I put them in a dish with a lid, as a rule, at night, during this time the crust softens a little and in the morning the loaves look more like slices of Moscow bread.

Flaxseed flour, I have Garnets, absorbs a lot of water. Therefore, often during cooking, if the dough thickens, I add water. For the same reason, I indicated the approximate amount of water. Focus on your preferences. You can also experiment with the amount of flaxseed flour, bringing it to 150 grams by reducing cornmeal. You can diversify the taste of loaves by adding seasonings.

I bake from both fine and coarse corn flour. I don't feel the difference and it is always equally tasty. Referring to nutritionists who claim that the larger the flour particles, the slower the absorption of carbohydrates and the better for the body, I can assume that coarse flour is healthier.

To try this recipe, I advise you to grease and bake a loaf of bread in one cell for the first time. See if the dough sticks and how long it takes to bake well. My 1300W waffle maker bakes for 15 minutes. I tried to bake for 6-10-12 minutes, but the most delicious and airy ones, as seen in the cut, are obtained in 15 minutes.

By the way, I changed the recipe a little, I have them without eggs.No eggs were added, as the ground flaxseeds replace the egg.
