Plum Plum Pie

Ingredients

Flour 1 glass
Sugar 3/4 cup
Egg 2 pcs.
Butter 50g
Sour cream 15-12% 50g
Plum 15pcs.
Brown sugar 1-2st. l.
Cinnamon 0.5-1h l.
Vanilla sugar 1 st. l. without top
Salt 0.5g
Baking powder 1 tsp

Cooking method

  • This cake is a variation of the American plum cake recipe from The New York Times. Actually - this is a recipe for grandmother's apple pie, but with a plum I liked it more. And the American version seemed too greasy due to the abundance of oil. And so the recipe:
  • Beat 2 eggs, sugar, vanilla sugar and soft butter with a mixer, add salt (to enhance the taste) and sour cream, continuing to beat. Then add flour and baking powder, continuing to beat with a mixer. I usually replace the baking powder with 1/3 teaspoon of citric acid + 2/3 teaspoon of baking soda, mix them into the flour before sending it to the dough. I knead with a mixer for a couple of minutes so that the baking powder dissolves.
  • Form - 22-24 cm, lining with parchment, oiled, spreading the whole dough at once, then insert halves of plums (pitted, naturally) into the dough with the pulp upwards from the center in a spiral or in circles. In the end, sprinkle everything, as in the American version, with a mixture of brown sugar and cinnamon. How much sugar to take: 1 or 2 tablespoons and how much cinnamon to taste. I took 2 tablespoons of sugar, mixed with 1 teaspoon of cinnamon, all with measuring spoons without top.
  • Bake in a preheated oven 200C for about 45 minutes. The cake should stand for a while. It was good both right away and on the second day - the dough will not get damp or stale if you close it with a cloth, not a lid.
  • If there are no plums, then it is quite possible to put apples, cutting them into slices and also sticking them into the dough in a spiral from the center or in circles.
