Flourless chocolate nut cookies

Ingredients

long-boiled oat flakes 80 gram
milk 50 grams
eggs s-1 1 piece
vanillin 2 sachets
sugar or any substitute 1 tablespoon, or to taste
peeled and roasted nuts (I have peanuts) 100g
bitter chocolate 100g
egg whites s-1 3 pieces
salt on the tip of a knife

Cooking method

  • Pour milk into the cereal, beat in an egg, add one packet of vanillin and add sugar or sahzam.
  • Stir, leave for 30 minutes to swell.
  • Then spread the resulting mass on a rug or paper with a layer of 0.5 cm.
  • Dry in the oven at 200 degrees for 10-15 minutes. Do not fry!
  • Can be made in a pizza oven, put the rug in a hot place, the time is the same.

  • Leave on the table, dry. I stood under a towel for 24 hours.
  • Then make a crumb either with a blender or, like me, with a potato mortar.
  • Make the crumb not into dust, but in small pieces.
  • Add ground nuts to the crumb. You can grind it smaller, you can leave the pieces. Optional.
  • Melt the chocolate, put it in the dry mixture, add another packet of vanillin, mix.
  • Beat the proteins with salt until stable peaks, add to the total mass.
  • Place either a rug or baking paper on a baking sheet.
  • Spoon the dough into small cakes.
  • Put in an oven preheated to 200 degrees and dry for 10-12 minutes. Not more!
  • Take out, remove and cool either on a wire rack or towel.

The recipe is my fantasy. At first I just wanted to grind the rolled oats, but then the finished biscuits would not have such porosity. And it turned out just super Airy, soft and very nutty-chocolate Flourless chocolate nut cookies
Didn't expect it to be so tasty
I highly recommend it.
The crumb can be made in advance and stored in a glass jar under a tight lid.
And you can also make more cookies at once, in reserve
