Ingredients

Cognac or liquor (optional) 1-2 tsp
For a creamy mousse:
Cream 250 ml
Cream cheese 190 g
Powdered sugar 2 tbsp. l
Vanilla sugar 8 g
Gelatin 9 g
Water 50 ml
For blueberry mousse:
Blueberry 400 g
Cream 250 ml
Sugar 100 g
Gelatin 12 g
Water 50 ml

Cooking method

    For a biscuit, beat the eggs with sugar for 7-9 minutes. Combine flour, cocoa and baking powder. After sifting, gradually add the dry mixture to the beaten eggs, stirring thoroughly with movements from bottom to top.

    Cover the bottom of the form 20-21 cm with parchment, rub the walls a little with butter and pour in the dough. We bake the biscuit in an oven preheated to 200 degrees for about 15-20 minutes (until a dry match). Cool the biscuit and remove the top crust.

  • In a cold bowl, beat the chilled cream with vanilla sugar and 1 tbsp. spoon of powder. As soon as the creamy mass thickens, mix it with the cheese. Beat with a mixer for another 10-20 seconds, combining the components into a homogeneous cream.
  • We heat the swollen gelatin in any convenient way. Cool slightly, pour the gelatin in a thin stream into the mousse, stirring intensively and continuously.

    We put the form on the substrate. Lining the sides with foil and putting the cake inside. Saturate with syrup. Pour the mousse onto the cake, level the surface and put it in the refrigerator until it solidifies easily.
  • Pour gelatin with water and let it swell.
  • Puree all the blueberries with sugar with an immersion blender. We put the resulting mass on the fire and heat it until the sugar dissolves. Then we carefully grind through a sieve. Whip the cold cream until soft peaks. Add the blueberry mass, beat until the cream is evenly colored. Heat the gelatin and pour it into the blueberry mousse with vigorous stirring.

    Pour blueberry mousse into a mold with biscuit and creamy mousse, level and put in the refrigerator until it solidifies.
