Uzvar from dried fruits and spices with walnut partitions or medicinal compote in slow cookers

Ingredients

Mix for compote from a wide variety of dried fruits 350 g
Purified water 3 l
Cinnamon One stick
Star anise 2-3 pcs
Anise (seeds) or vanilla seeds literally a pinch
Walnut partitions from 5-10 pcs.
Cardamom boxes 3 pcs
Semi-sweet or sweet wine such as Cahors or dark rum 50-100 ml
Sugar for cooking or honey for additive taste
Carnation bud 1 PC.
Nutmeg pinch
For serving, crushed cranberries, lingonberries or sea buckthorn, lemon or orange juice 2-3 st. l.

Cooking method

In this recipe, I offer my own, I have invented for my family, a composition of a healthful and healthy, tasty and rich uzvar, which I often cook in winter, especially during the period of various viral infections and flu epidemics. And already when someone in the family gets sick with a cold or a viral disease, this health-improving compote is just a godsend - it saturates, and warms, and nourishes, and replenishes vitamins and minerals.
The set of dried fruits should be as varied as possible. The basic composition for a delicious compote includes dried apricots (or dried apricots), prunes, raisins, dried apples and pears. All other tasty and healthy, dried wild and garden berries and even some types of herbs are welcome for greater benefit.
Dried fruits, especially purchased ones, in which a lot of sand and dust are very often found, must be washed as best as possible. We rinse several times with cold water, pre-soaking a little. Fill the washed dried fruits with boiling water and let stand for one minute. Drain the water, rinse again with cool water and put it in a slow cooker saucepan or in a slow cooker pan.
Pour purified water into a saucepan. In order not to bother with the scales, you can use a volume measure - for one volume of not very densely compressed dried fruits we take 4 volumes of water, a maximum of 5. We cook uzvar, not compote. The fruits in the uzvar remain whole, there are a lot of them, they are tasty, and it is simply a crime to throw them away.
Now add all the spices and walnut partitions. Wine or rum can be added right away, or when serving hot compote, add it to a cup for added health benefits, especially for colds. Today I added wine directly to the pot. If children drink the compote, then we add wine immediately, in the process the alcohol will evaporate, and the necessary substances will be preserved. The amount of sugar depends on how acidic the apples and berries are. I cook almost without sugar, and when used I add honey directly to the glass or drink without it. For a sweet compote, put 4 -5 tablespoons of sugar on this amount.
Cook in LOW mode for at least 8 hours. To get exactly uzvar, and not compote, you need to achieve a simmering mode without boiling, so it is advisable to cook in the "slowest" slow cookers or in manual mode in multicooker at a temperature of 90-95C. It is important to check here so as not to boil the fruit into trash.
When serving hot compote, add crushed fresh defrosted berries and freshly squeezed citrus juices directly to the cup for greater healthfulness and a healing effect.

I do not recommend using natural vanilla substitutes in this recipe. For a healing effect, it is better to use real cinnamon rather than carob bark. I have real cinnamon powder, I added it to the compote. And in the photo, in a glass for decoration, cassia sticks are inserted, which is often confused with cinnamon. Cinnamon lighter, its sticks break easily, exfoliate, the aroma is softer and the aftertaste is sweetish. Although cassia , like cinnamon, and has a lot of useful properties, you should be careful with it because of the higher coumarin content than cinnamon. Therefore, do not get carried away by treating children to cookies sprinkled with cinnamon powder, as most likely due to the cheapness in inexpensive pastry, cheaper cassia is used in bags with crushed cinnamon.
But still, it should be noted that cassia contains phytoncides, due to which it has an active antimicrobial and antiviral properties. Some studies have proven the benefits of cassia in age-related diabetes mellitus.
And cassia also reduces blood platelet aggregation and normalizes cholesterol levels.
So “Everything is poison, nothing is devoid of poisonousness, only one dose makes the poison invisible,” as Paracelsus said. However, he spoke so like Hippocrates after 2000 years.

It is better not to give cassia to children, or to be limited to just a couple of cookies with it.

Walnut partitions also have healing properties.
Uzar or vzvar is a drink obtained by bringing to a boil or boiling water with herbal, fruit and berry or wine additives, honey and spices. The name comes from the word "brew", as dried fruits are only brought to a boil.
In the old days, the brew, like a drink made from dried fruits, could also be prepared with beer.

A decoction or infusion of walnut partitions is also very useful.
Residents of the northern and middle latitudes lack vitamins, especially in the autumn-winter period. To compensate for their deficiency in conditions of low solar activity, use an infusion of walnuts or a decoction of partitions.
The membranes of walnuts are used in folk medicine for a large list of diseases, they help the body to replenish the lack of vitamins A; FROM; E; PP, K, rutin and B vitamins, and also contain lysine, amino acids, tannins, phytoncides, pectin. Such a composition helps to reduce bad cholesterol, cure stomatitis when rinsing with infusion, prevent the spread of viruses in the body, and much more. The infusion is good for skin diseases and some diseases of the cardiovascular system. The medicinal properties of walnut partitions are recognized by official medicine.
I cooked this compote in the Ninja Foodi® 6.5-qt Multican, it is very soulful to cook such things in it.
Do not use spices in compote that you do not like, replace with others.
