Ingredients

For the test:
Flour 550 g
Butter or margarine 250 g
Sour cream 250 g
Baking powder or baking soda 1 tsp
Salt 0.5 tsp
For filling:
Dried apricots 200 g
Sugar 180 g
Form or baking sheet 30 x 40

Put warm sour cream in a deep bowl. Add soda, stir. Grind the sifted flour and cold butter into crumbs. Then add salt and mix. Now add sour cream and collect the dough into a lump, cover it and rest for 15 minutes.

For the filling, rinse dried apricots, pour boiling water over and leave for a couple of minutes. When dried apricots are swollen, drain the water and twist in a meat grinder. Add sugar and stir. Separate one third from the dough and set aside for now. Roll out most of it into a 1 cm thick layer. Put in a mold. Put the filling on top and distribute evenly.

Roll out the second part of the dough. Place on top of the filling. Bend the edges and press lightly with your fingers. Turn the cake gently. Make punctures with a fork. Brush with egg and sprinkle with sugar. Bake at 200 ° C for 35 minutes.
