Tighten the bottom of the assembly ring with foil (if the diameter of the biscuit is equal to the diameter of the ring, you can skip this step). Lay the sides of the mold with acetate tape. Lay out the biscuit.

The dish is designed for

Cake weighing about 1 kg

Note

Based on Julia Smol's recipe "Bird's milk cake". Replaced 50 grams of condensed milk in a soufflé with chocolate, and also changed the glaze recipe.

I took large eggs, weight without shells 56-60 grams. I forgot to weigh whites and yolks separately, sclerosis.

Agar-agar is not at all a terrible beast. If everything works out with gelatin, then there will be no problems with it.

Man, not that scary, but unbroken.
The cake is a masterpiece, this is chronic)

Manya, this is not a cake, this is delight. Reminded me from childhood - "bird's milk" candy with chocolate
stuffing.
Sonadora
eye, Tan, in chronic I have a lot of things and these are clearly not masterpieces.
And that the beast is not outraged so it's cool! Such a field for experimentation and discovery lies ahead.
Volga63, Larisa, thank you. I hope you enjoy this version of "Birds" too.
Trishka
Oh, what a beautyaaa !!!
Manechka, thanks for the detailed Mk, it seems not very difficult, but agar-agar ... And the truth is an unknown beast.
I tried to portray a marshmallow here, nothing came of it until I made friends with him ...
Man, what kind of agar do you use, brand?
Sonadora
Ksyusha, Thank you. Try this technology, when the agar is boiled with syrup right away, and not in the already hot one. Maybe you boiled it a little and it didn't work?
In many recipes, it is recommended to start with boiling syrup, and beat the whites in the process. I don't know about normal people, but I have agar, how I stop actively stirring it constantly and get distracted by proteins, it ends up at the bottom of the ladle.
Agar I use Dr. Oetker, 7 gram sachets. I bought it in Lenta, I saw it available on Ozone.
I can't say anything about marshmallows, I have never done it.

It turns out that you mix everything at once and cook?
And I took agar Kotani, the girls said that I needed Oberovsky.
Sonadora
Ksyusha, yeah, immediately cook. But constantly stir intensively all the time, otherwise the agar will be at the bottom. I don't know if it's right or not, this is how Julia did in her video, well, I followed her, everything worked out.
Trishka
Thanks, I'll try.
Volgas
Well, that's what happened and happened. We can say that the premiere of the agar cake went well. I was really a little overcautious and put a little more agar than in the recipe. And it seems not in vain. In the end, not bad. One small "but" - a little bit sweet for my taste.
