Oil 170 g
Gelatin 12 g
Water 40 ml
Zest from two lemons
For cream cheese:
Cream cheese 300 g
Butter 100 g
Powdered sugar 80 g
Shape 20 cm

Cooking method

The recipe for this cake was looked at by Oksana Pashko. And immediately decided that it was mine. And the next day she brought it to life. And it was not for nothing that I was in such a hurry - the cake turned out wonderful.

Grate the lemon zest and squeeze the juice. Sift flour. Divide the eggs into whites and yolks.

Beat the whites until light foam and start adding 140 grams of sugar in portions. Whisk until firm foam. Introduce the yolks one at a time, whisking continuously.

Then add the sifted flour. Stir with a spatula.

Pour in melted butter and lemon juice.

Line the bottom of the mold with parchment and pour the dough into it. Bake at 180 gr for 35 minutes.

Cool the finished cake and cut into three cakes.

For the cream, pour gelatin with water. Beat eggs with 140 gr of sugar until it dissolves.

Pour lemon juice into a saucepan, add 160-180 grams of sugar and zest.
Bring to a boil over low heat. As soon as the mixture boils, pour it in a thin stream into the yolk mass, stirring continuously at the lowest speed with a mixer. Immediately pour the cream back into the saucepan and bring to a boil and stirring to boil for 3-4 minutes until thickened.

Add the swollen gelatin to the cream and mix.

And add oil in parts, stirring with a whisk. As the oil dissolves, let the cream cool.

Put the first cake in the mold and pour half of the cream on it. Put in the freezer for a few minutes. As a cream, put the second cake on top a little and pour out the second part of the cream. And again remove in the cold. And put in the third cake. Cover with cling film and put in the cold until completely solidified.
