Ingredients

cottage cheese 250 g
chickpea broth 100 ml
sugar 250 g
butter 150 g
lemon acid 1/4 tsp
vanillin on the tip of a knife
or vanilla sugar 1.5 tsp
flour 330 g
soda 1.5 tsp
raisins (I have dried cherries) 100 g
icing sugar for dusting optional

Cooking method

The first step is to prepare a chickpea broth. We prepare it in advance. I always make chickpeas out of a glass and use them later for other purposes. To mess around, so once.
We wash the chickpeas and fill them with cold water. We leave it for at least 8-10 hours. After that, put on fire, and bring to a boil. Then we reduce the heat to a barely visible boil and cook until the chickpea peas become soft, but they still hold their shape. Then we drain the broth, cool and use it as directed.
Now we turn directly to the preparation of the cake. Thoroughly grind the cottage cheese with sugar and softened butter.
Add citric acid, vanillin and chickpea broth. Mix everything thoroughly again.
Add flour, soda, raisins.
The dough should turn out to be quite viscous, put it into the mold with a spoon, it will not pour out itself, but will slowly fall out.
Grease the mold with oil and sprinkle with flour or semolina. I did not lubricate the silicone mold with anything.
With the dough mold, knock on the table surface several times to fill the voids and place in the preheated oven
Bake at 170 degrees for 60-65 minutes. But be guided by your oven.
Leave the finished cake for 1 minutes in the form, then transfer it to the wire rack to cool.
After transferring the cake to the dish, sprinkle it with powdered sugar. Well, you can do without it.
