Cooking method

Repeated attempts to bake bread and rolls from starchless dough on baking powder did not satisfy me with their heavy structure. Suddenly, the idea came to mind about simple carbohydrates (in the absence of starch) in the composition of dried onions and zucchini, which I introduced into the dough to reduce the fat content of nut flour. And even such a small amount of them raised the dough, the dough itself, of course, from heavy nut flour - to a lesser extent. But, nevertheless, the structure obtained during the baking made me very happy.
The ratio of the components may seem strange: 2 tsp. psyllium and 10 g of yeast I put on 500 g of wheat or a mixture of wheat and rye flour (mixture with CZ 50:50). In this recipe, flour (nut + vegetable) is 10 times less, but the structure of the resulting dough is very close to our usual bread - fluffy, airy. The crust is thin.
The only thing I will add next time is to grease it with an egg before and after sprinkling with sesame seeds to keep the sprinkling better. I think that the next will be open cakes from such a dough.
Since the Chef decided to move the recipe from the Healthy food section, I want to emphasize that the recipe is aimed at those who want to lose weight and maintain the achieved results. That is, for those for whom the problem of baking, and especially bread, comes to the fore in dietary restrictions. For some reason, everything is problematic with baking bread.
