Ingredients

Dough
premium wheat flour 150 g
semolina (semolina brand T) 90 g
water 375 BC
pressed yeast 5 g

water 100 g
lemon juice 15 g

Cooking method

Mix in plain flour, semolina and salt. Dissolve the yeast in lukewarm water.

Make dough. Pour in the liquid gradually and mix well so that there are no lumps. The dough should be thicker than for pancakes. Place the dough in a warm place. Let it rise. Stir the dough.
Syrup.

Mix water with sugar and lemon juice. Put on a small fire. Cook after boiling for 10 minutes. The syrup should thicken. The temperature is about 120 degrees. Remove the syrup from the heat. Add zest. I didn’t add.
Filling.

Chop the nuts. Add sugar and cinnamon. Mix.

Take a non-stick frying pan. Do not lubricate with oil. Pour the dough into a cup with a spout. Bake small, not thick pancakes. Fry on one side. A pancake is considered ready if it is covered with bubbles and the shine of raw dough has disappeared.

Put the prepared pancakes on a towel, toasted side.
