Irina gave a very tasty recipe for French baguette in the Thermomix group on the German website:

500g white flour
1-1.5 tsp salt
pinch of sugar
1/4 cube of yeast (cube - 42 gr.)
and 260-270 g of water (very cold!)
2 min / spikelet

in a closed plastic dose or bowl and refrigerate for at least 24 hours. even better for longer!

divide the dough into 3 parts and stretch (scrolling like a rag when squeezing). it is very important not to knead or swing your hands!

bake in a preheated oven 250 ° / 15-20 min, let cool and only then use.

I try not to experiment with yeast dough. Yet it must withstand normally. But that's my opinion
I bake bread or buns only from whole grain ground in TM grain, then it turns out quickly and tasty

Long exposure to cold makes it possible to use less yeast (only 10-11 grams of fresh yeast), so they are almost not felt in the baguette.

It also seems to me that the most delicious bread is when the dough stands normally.
