I want to offer another recipe for shortbread dough, perhaps many already know it, it is old. I tried to knead it in a thermomix, but the dough turned out to be kind of sticky :-( I kneaded as written in the recipe for shortcrust pastry in a book: 40 sec / sk.5, but it all crumbled, then I still kneaded a minute on a "spikelet".

Grated pie
200 gr margarine
2 eggs
1 cup of sugar
1 bag of baking powder
2-3 glasses of flour (so in the recipe for kneading by hand, the point is that you need to add flour while it is "taken" into the dough so that it is tight)
1 packet vanilla sugar (optional, if you like)
any jam (I took homemade apricot jam and cherries from compote)


Mix all the ingredients - I ask for help here: in what mode to do it? when you knead with your hands, the margarine melts in your hands and the dough is elastic, and when I tried to knead in a thermomix, it all crumbled. This did not affect the taste, but the dough came out sticky for me, which made rolling out a little difficult. What I did wrong?

Divide the dough into two NOT equal parts. Put the small one in the freezer, and roll the large one on a baking sheet (believe me, this amount of dough is enough for a large baking sheet in a thin layer). Pierce the entire area with a fork.

Grease the rolled dough with jam. Remove remaining dough from the freezer and grate on top.

Bake in a preheated oven for 25 minutes (10-15 minutes for 180-200 *, when it rises and begins to brown, you can turn it down to 150 *).

Cut the finished pie into pieces, while hot, and place on a plate.
To keep cookies crisp and crunchy, keep uncovered. If you want it to look more like a cake, then after cooling, you can put it in a container or bag, then it will be crumbly, but soft.

bluekitten, Soviet recipe I also baked. But she did not roll out the bottom layer, but she always leveled it with her hands on the baking sheet, so I didn't really bother about which dough was sticky or not. I'll see the recipe for myself. I think the same. Very nice cake!

Roll out or knead the bottom layer with your hands - this is not important, the fact is that the dough also strongly adhered to the grater.
I think it’s not the recipe, it’s already been tested a hundred times, but the fact that I didn’t knead the dough correctly in the thermoix, it didn’t even have such a structure, as usual. I can explain ... when I opened the thermomix, the ingredients just mixed there, but they didn't quite turn into dough, didn't stick together, one might say so.
