Ingredients

For the biscuit:
Flour 150 g
Sugar 150 g
Cocoa 2 tsp
Eggs 3 pcs
For mousse:
Cream 33-35% 250 g
Cream cheese 250 g
Powdered sugar taste
Sea buckthorn juice (3 cups berries) 200 ml
Gelatin 13 g
Water 75 ml
For glaze:
Dark chocolate 150 g
Cream 33% 150 g
Gelatin 6 g
Water 30 ml

Cooking method

For a biscuit, mix flour with cocoa. Beat eggs with sugar for 7 minutes. Sift flour mixture into egg and beat. Line the bottom of the mold 20 cm with parchment, pour the dough into it. Bake until tender for 20-25 minutes.

Pour gelatin with water. Mix. For juice, heat thawed sea buckthorn with sugar until sugar is completely dissolved - 3/4 cup sugar in a glass of berries, then punch with a blender and rub through a sieve. Measure out the required amount of juice, heat and dissolve the swollen gelatin in it.

Whisk the cream until peaks with powdered sugar. Mix both mixtures.
