Muffins with rye flour, apples and black currants

Ingredients

Wheat flour 100 g
Rye flour 50 g
Brown sugar 55 g
Baking powder for the dough 6 g
Egg (small) 40 g
Natural yoghurt (no additives or dyes) 95 g
Milk 60 g
Vegetable oil 35 g
Acacia honey 1 tbsp. l.
Vanilla extract (according to instructions) option
Black currant berries (frozen) 80 g
Apple (small) 1 PC.

Cooking method

Preheat oven to 180 C.
Prepare a muffin baking dish: if you have paper inserts, insert them into each compartment, otherwise, just grease the cells with oil.
Add sugar and flour, sifted with baking powder to a bowl. Add the egg, milk, yogurt, butter, vanilla extract, honey to another bowl and stir until smooth.
Peel the apple and cut it into pieces, add the currants to the frozen berries and set aside.
Add the liquid mixture to the dry ingredients, work quickly, just to mix everything together until smooth. Add the chopped apple and berries and spread the mixture over the cells of the mold, filling about 3/4 full.
Bake the muffins for 25-30 minutes, checking the doneness with a wooden skewer.
