Lemon marshmallow with ginger

Ingredients

applesauce 170 g
lemon pulp 40 g
protein 50 g
fresh ginger 10 g
sugar 150 g
Syrup
water 180 ml
agar-agar 14 g
sugar 300 g
glucose syrup (if not, then sugar) 50 g
food coloring option

Cooking method

Peel and grate the ginger. Peel the lemon and cut the flesh without veins. Add ginger and lemon pulp to the applesauce. Purée. Put on fire. Bring to a boil, stirring occasionally. Boil for 2-3 minutes. Purée again. Allow to cool completely.
