Ingredients

flour 125 g
butter 100 g
powdered sugar 50 g
yolks 1 PC
for lemon Kurd
lemon juice 1 PC
lemon zest 1 PC
eggs 1 PC
sugar 50 g
starch 5 g
butter 15 g

Cooking method

Cut the butter into pieces. Grind with flour into small crumbs. Add powdered sugar and a pinch of salt and stir. Add the yolk, knead the dough, wrap it in foil and refrigerate for 1-2 hours. The dough can be quickly kneaded in a blender.
Roll out the cooled dough on a floured surface. Using egg-shaped molds, cut out a cookie consisting of two halves, one with a hole.
Bake preheated to 180 aboutFrom the oven for 10-15 minutes until golden brown.
For the lemon curd, grate the lemon zest and squeeze the juice. Mix sugar with zest, pour in juice, add loose egg, stir and leave for 15-20 minutes. Then pour the mixture into a saucepan with a thick bottom, add starch and oil, stir and cook over low heat, stirring constantly until thickened. Remove from heat, cover with foil in contact and cool.
We collect cookies. We coat one half of the cookies with Kurd and cover with the other half. Sprinkle the cookies with powdered sugar (so that the powder does not get on the "yolk", during assembly, first sprinkle the half with a hole with powder, and then carefully cover the bottom of the cookie with it).
