Ingredients

Zest and juice of one lemon 1 PC.
Draining. room temperature oil 100 g
Cottage cheese 150 gr.
Vanilla sugar (I have vanilla paste) 2 tsp
White sugar 100 g
Brown sugar 100 g
Eggs 3 large
Flour (of which I replaced 50 gr. With almond) 380 gr.
Baking powder 1.5 tsp.
Milk 100 g
Cognac (rum, liqueur) 10 gr.
Ground lavender flowers 1.5 tbsp. l.
Salt pinch
Cardamom, star anise to taste and desire
Candied fruits, dried fruits (I have cherries and dried apricots) 2 - 3 tbsp. l.

Cooking method

Remove the zest from the lemon and squeeze the juice. Mix lemon juice with milk and let stand for a while (there will be buttermilk).
Sift flour and mix with baking powder and spices.
We divide the eggs into whites and yolks.
We wash the candied fruits, dry, if necessary - cut and mix with 1.5 tbsp. l. flour from the total amount of the recipe.
We turn on the oven and heat it to 160 - 170 degrees.
Whisk soft butter well with 150 gr. sugar (another 50 grams of white sugar is left for proteins, which we beat separately with this sugar and salt).
Continuing to beat, add: vanilla; lemon zest; cognac; one at a time, beating well after adding each, the yolks; cottage cheese.
Then, alternately at low speed of the mixer, add part of the flour - half the buttermilk (milk with lemon juice) - part of the flour - half the buttermilk - the rest of the flour. Then turn off the mixer and manually carefully introduce the whipped proteins, mix well with a spatula. Then - candied fruits.
Put the finished dough into molds and bake. I had 3 paper cakes with a diameter of 9 cm. We place the dough in the molds 2/3 of the height, because it rises well) I baked at 170 degrees for about an hour, but you look in your oven. Here's what happened: for clarity, I specially freed one cake from the mold)

And here I will share a recipe for an absolutely amazing, in my opinion, glaze, which became a discovery for me this year)) Well, judge for yourself: it is prepared in less than 5 minutes, very tasty, without eggs, wonderful gloss, freezes perfectly, but not crumbles and does not fall off the cake - I don't know what could be better, honestly))
So, the glaze recipe: mix condensed and powdered milk to the desired thickness (by eye) - that's it!)))

The dish is designed for

3 Easter cakes weighing about 450 gr.

I just love lavender very much, and I made the recipe for myself, but without lavender it is also quite possible.

I love the scent of lavender before I brought it from the Crimea, bought a fresh bouquet, while driving to the house, it managed to dry out on the top shelf, from a small bouquet the scent was on the whole car. Unfortunately, I haven't been in Crimea for 1000 years ... because yeast-free has not yet baked, but so far without lavender.
