Ingredients

Dry yeast 7 gr.
Wheat flour 220 gr.
Rye flour 350 g
Salt 10 gr.
Sugar 30 gr.
Gluten 25 gr.
Olive oil 50 gr.
Malt extract liquid 80 gr.
Crushed garlic 3 cloves
Butter for frying garlic 15 gr.
Provencal herbs 1 tbsp. l.
Caraway 1/8 tsp
Water 330 gr.

Cooking method

Quarantine gives time and an opportunity to improve recipes that were previously shelved. This recipe I failed several times and was abandoned. Now, it seems to me, the optimal balance of ingredients has been found.
The basis of the recipe is in the 2013 Panasonic Bread Maker Recipe Book.
Strictly according to the recipe, the bread did not work, according to my feelings - little water, in the original recipe - 300 g., It seemed to me optimal - 330 g.
The recipe says sunflower oil, I don't like its smell, so I always added olive oil.
In addition, I simmer the mashed garlic in butter until golden brown, about two minutes, to make the bread more aromatic. This is not provided in the original recipe, the delicate aroma is preserved, but with its preliminary roasting, the bread turns out to be much more interesting. Also, frying the garlic in butter, which is not provided by the recipe, I did not reduce the amount of vegetable oil specified in the recipe (50 g).
Simmer the garlic in butter.
Load the ingredients into the bread maker according to the instructions, for Panasonic 2501 - yeast, then flour, other dry ingredients, oil, water. The herbs can be added to your liking, I like the combination of garlic with a tablespoon of Provencal herbs, or you can add a small pinch of cumin.
The bread is baked on the "rye" mode (program no. 7), 3 hours 30 minutes.

Olga, thanks for the recipe! I baked in a Mulinex bread maker. The bread turned out to be tall, fluffy, soft. To my taste with herbs too much. Next time I'll put less. The bread hat is not perfect, but my cotton generally began to behave strangely. I now more and more often bake sourdough bread in the oven.
