Natural yoghurt (no additives or dyes) 125 g
Wheat flour, premium 270 g
Almond flour (or chopped nuts) 25 g
Sugar 125 g
Butter 50 g
Egg 3 cat. 1 PC.
Baking powder for the dough 5 g
Lemon (zest) 1 PC.
Powdered sugar or sugar taste

Cooking method

Pour yogurt and chilled melted butter into a bowl. Stir in and add sugar, egg, wheat flour, almond flour, baking powder and grated zest of one lemon. Stir all the ingredients until a smooth but soft and sticky dough is obtained. Cover the bowl with a cloth and transfer the dough to the refrigerator for an hour.

After the dough has cooled, you can start forming the cookies. Separate a small piece of dough and form a cylinder. Mentally separate the cylinder and roll the cylinder with your finger, forming a thinner transition from the "body" to the "head" of the bird. Place the blank on a baking sheet lined with parchment paper. Then separate another piece of dough and form a cylinder again. Place it on the "body" forming the letter "U" - "wings". Continue in this way until the dough runs out. Don't make the birds too big, as they will grow larger when cooked.

Sprinkle generous amounts of caster sugar or sugar over each piece. Powdered sugar very similar to the miniature yeast format Colombine di Pasquali. Place the baking sheet in the oven and bake at 190 C for 15 minutes. They should not take too long to bake or be too ruddy. The biscuits should remain slightly soft to the touch and become drier after cooling. Remove the cookies from the oven and let cool.
