I also usually add a dozen berries of frozen black currants or dried cherries to tea. After drinking a cup of tea, we scoop out the rest of the lemon from the bottom with a spoon! Nothing is thrown away! The zest after freezing is completely non-bitter, and acquires a completely different taste.
