Ingredients

Kefir at room temperature 125 g
Warm milk 125 g
Fresh yeast 20 g
Sugar 60 g
Flour 500-550 g
Eggs (leave one yolk for lubrication) 2 pcs
Vanillin
Butter, soft 50 g
Soda 2 g

Cooking method

These buns are airy as down, light, weightless, with a slight sweetness. Prepared from cold dough. They are eaten in an instant. In the original, they are without anything, like, for example, dessert bread (by the way, if you decide to make dessert bread from this dough, and not buns, then reduce sugar to 30g, and yeast to 15g).

Stir the yeast in warm milk until dissolved. Pour sugar, salt, soda, vanilla into a separate bowl, stir until smooth. It is better to initially take flour 500g, it is better to add it later than it will be too much. My eggs are large, without a shell, 60-63g each, my dough takes exactly 550g of flour.
Combine eggs and soft butter. Remember, out of 2 eggs, we leave one yolk for greasing the buns? Pour kefir at room temperature into the mass.
Pour the milk-yeast mixture into the flour, mix a little, pour in the pastry (butter, eggs ...). Knead for about 10 minutes. The finished tsto sticks to your hands, but does not stay on them. After proofing, the dough will become even more manageable. Round off.
Lightly grease the proving bowl and dough with vegetable oil and leave on the table for 30 minutes, covered. After 30 minutes, put the dough in the refrigerator for 2 hours (do not crush !!!). The dough should fit well during this time.
If you have changed plans - after kneading, you can put the dough in the refrigerator for 3-4 hours, but not more!
Sprinkle the rug or table with vegetable oil, take out the dough that has come up and roll it into a kolbaska, then divide into 12 parts (about 85g each). Roll up. Slightly grease with vegetable oil, cover with foil and let rest for 5-10 minutes.
We do not dust the table, if necessary, just drip a drop of oil on the table and rub it. Roll out the first piece of dough into a thin and long layer, turn it over, roll it out a little more and turn it over again. The bed width should be about 8-10cm.
Twist the roll, pinch the seam.
Weightless buns
For a change, I added raisins to part, poppy filling to the second, and left the third without anything. Arrange the buns in a baking pan in two rows of 6, seam down. I have a shape of 33 * 23 cm at the bottom. Cover with foil and leave at room temperature for 50 minutes to rise (or in a warm place). Lubricate with the previously set aside yolk, diluted with 2 tsp. water.
Sprinkle with sesame seeds. After 5-10 minutes, we put it in the oven.
We bake at 190C for about 20 minutes. The first 15 minutes in the middle, then 5 minutes one level below (if the oven is electric). Let cool for 5-7 minutes in the form, then on the wire rack.

I haven't tried sourdough, to be honest, I'm always too lazy to count the amount of sourdough instead of yeast, or my formula is difficult))) I think it will work if you prepare it for baking in advance
