Gray bread with live yeast from wheat (w / s) and whole grain flour for Panasonic SD-2501

Ingredients

Wheat baking flour, premium 500 g
Whole grain flour 100 g
Salt 2 tsp
Sugar 2 tsp
Pressed yeast "Lux Extra" 7 g
Water 350 ml
Powdered milk (cheese) whey (dissolve in water) 1 tbsp. l. + 1/2 tsp.
Unrefined sunflower oil 2 tbsp. l.

Cooking method

Sift all 600 g of flour into a bowl: 500 g of premium flour and 100 g of whole grain flour. Stir the flour thoroughly until smooth².
Measure in a separate glass 2 tablespoons of sifted flour, it will be needed to "start" the yeast. Put 7 g of compressed yeast in the same glass, stir and fill with boiled water (100 ml), heated (or cooled) to about + 37 ° C. Stir the contents of the glass thoroughly, wrap it with a towel and cover with a lid.
Dissolve whey powder in the remaining water (250 ml) (this is called "recover serum").
In a bowl with sifted flour, add all the salt and all the sugar. Remove the bucket from the bread machine and pour all the flour from the bowl into it.
After the resulting mass begins to rise in the glass, pour it into the bucket of the bread machine (on top of the flour). Then pour the reconstituted whey and sunflower oil there.
Put the bucket back into the bread maker, select program "01", size XL, color of crust to taste. Then press the START button.
¹) Control the exact amount of water during the kneading process by the appearance of the dough bun. You may need to add 1 tablespoon of water.
²) Stir the flour as thoroughly as possible until a homogeneous mixture is obtained.

This bread recipe is the result of my "student" attempts to get a well-risen, beautiful and tasty gray bread in a Panasonic bread maker. This is the second recipe after the usual white one, but it so happens that here he was the first. I use wheat flour "Ryazanochka" bakery premium "and whole grain flour Grunele (Altai).

The bread is great! Elastic and "rubbery" crumb, delicious aroma and thin crust. I deviated from the recipe a little: I baked with instant yeast and regular whey. But I'm very happy with the result)))
