Sauce Bearnaise

Ingredients

white wine vinegar 50 ml
dry white wine 50 ml
shallots or chives, chopped 1 tbsp. l.
yolk 3 pcs.
fresh chopped tarragon (dry) 1 (1/2) Art. l.
ground fresh pepper taste
salt taste
cold butter 30 g
melted butter 125 ml
freshly chopped parsley (tarragon) 1 tbsp. l.

Cooking method

Sauce Bearnaise
Pour vinegar and wine into a saucepan. Add onion, tarragon, pepper and salt. Put on fire.
Sauce Bearnaise
Boil so that two tablespoons of liquid remain. Allow to cool. Strain.

Beat the yolks until smooth and thick.
Sauce Bearnaise
Pour in the vinegar mixture and beat again.

Pour into a saucepan. Add half of the cold butter. Put on fire.

While stirring, bring the sauce until thick.

Add the other half of the cold oil.

Continuing to stir vigorously, pour in the melted butter in a thin stream. The mass should become homogeneous.
