Ingredients

Carrot 4 things
Potatoes 2 pcs
Onion 1 PC
A tomato 1-2pcs
Cilantro 1 bundle
Fresh ginger (5-6cm piece) 1 PC
Zira 1h l.
Coriander 1h l.
Mustard seeds 1h l.
Black cumin 1h l.
Spicy pepper 1 PC
Turmeric 1h l.
Nutmeg 0.5h l.
Salt taste
Frying oil

Cooking method

Heat oil in a frying pan or cauldron, add coriander, cumin, mustard seeds, nigella, hot pepper and finely chopped fresh ginger. Warm up so that the spices reveal their aroma.
Add finely chopped onion, fry until golden brown.
Add the tomato, cut into pieces. Fry until the tomato juice evaporates.
Add finely diced carrots and potatoes. Pour water level with vegetables, bring to a boil.
Add turmeric, nutmeg and salt to the water. Cook without a lid over low heat until vegetables are cooked and the liquid is almost completely evaporated.
Add a handful of cilantro, stir, cover and turn off heat. Let it brew for 5 minutes and serve with tortillas or rice.
