Ingredients

For the test:
Wheat flour 600 g
Milk 1/2 l
Salt 1 tsp
Sugar 100 g
Fresh yeast 30 g
Oil 150 g
Yolk 4 things.
Zest of 1 lemon
For the poppy filling:
Poppy 150 g
Milk 1/4 l
Sugar 40 g
Oil 20 g
Ground gingerbread 30 g
Lemon zest 1 tsp
Cinnamon 1 tsp
Chocolate 20 g
Honey 1 tbsp. l.

Cooking method

  • Dissolve yeast in warm milk, add 1 tbsp. l flour and 1 tsp. Stir the sugar and let the dough bubble and come up a little, beat the yolks in a water bath with sugar until thickened and whitened, cool until warm. Pour flour into the dough, add the yolk-sugar mixture, salt and knead for about 20-30 minutes (I think the dough mode is just right) at the end of the mode, pour in the melted (cool to a warm state) butter and add the zest again, knead for at least 20 30 minutes.
  • Take out the dough, roll it out, spread it with poppy filling, roll it up, put it in a circle (rolled up with a snake) in a suitable shape, let it stand well and bake at 180 until tender.
  • Filling: boil milk with sugar, boil the poppy in it until soft (I plan to grind the poppy in a coffee grinder and cook in milk until it thickens), then thoroughly crush it in a mortar.
  • Mix the resulting mass with honey, lemon zest, cinnamon, grated gingerbread (gingerbread can be replaced with almonds) and chocolate.

I think without the poppy filling it will be gorgeous like a rum-baba, just add raisins to the dough and soak them.

n13, I think it is quite possible, however, I am not special in the poppy filling, this was my first try, I ground the poppy in a coffee grinder, boiled it in milk for literally 5 minutes and added everything else. I really liked the result
