Dumplings on kefir

Ingredients
Kefir 2 glasses
Egg 1 pc.
A pinch of salt
How much flour will the dough take
Baking dough 1-1.5 tsp.
SECOND OPTION:
Pancake flour 1 kg.
Baked milk 1 glass
Egg 1 pc

Cooking method

1. For dumplings I make dough on kefir or whey, as my grandmother taught. And only for dumplings with berries - on the water.
slightly warm about 2 cups of kefir

how much flour the dough will take. Yes, sprinkle with baking powder on the dough. I always sprinkle it by eye. Maybe 1-1.5 tsp.
Stir out the not steep dough, cover with a towel and let stand for half an hour. And then roll and mold the dumplings.

I make them from pancake flour
For 1 kg. pancake flour
1 glass of baked milk
a little water, I won't say for sure, because you have to look at the dough.
1 egg.
Kneading the dough is not very cool.
And I make dumplings. But I do not boil them, but steam them. I pour water into a saucepan, bring it to a boil, and when it boils, I pull cheesecloth. I spread the dumplings and cover with a lid, wait 10 minutes. The dumplings are ready.
While the dumplings are being cooked, I fry lard with onions in a frying pan and pour all this overcooked business into a bowl where I will put the dumplings, of course this is not for a sweet filling. And then I mix them or shake them together with the dumplings. Of course this is not for everybody. Instead of lard, you can simply overcook an onion in vegetable oil.
They turn out like pies - lush. Highly recommend.
And the next day, if of course they remain, I throw them into a frying pan and fry them, they turn out even tastier.
And I make fillings like this:
1. Braised cabbage.
2. Potato with liver
3. Curd
4. Any berries.
I cook dumplings in a double boiler, only the grate should be well greased with odorless vegetable oil.

Correct steamed dumplings, after being removed from the steam, do not settle.
If they settle, then there are several reasons for this. Either the dough is not correct, or undercooked or overcooked. Or rolled out the dough thinly.

I did not mean the size. and 30 minutes is not my desire. this is how it is written in the recipe. probably due to the fact that there are many eggs. something like steamed biscuit. but I cannot explain. it must be done and you will see for yourself how it turns out and the fact that on kefir I settle for the reasons that you described. I agree with you. and I know these reasons. and I always take this into account. but still settle ((((

Recently I got a double boiler. I decided to please with dumplings. I read that you can cook a lot in a double boiler at once. so I laid 3 tiers. While the first tier of dumplings was boiling, the upper ones sat down and hardened ... What's wrong? I thought that I still need to cook one tier at a time, since the steam does not reach the required volume to the upper tier and the dumplings are overlaid.
Made on kefir. I used to make these in an ordinary saucepan for a couple - everything worked out ...
