Then I added everything the recipe required and kneaded the dough. The dough turned out to be greasy and gave a strong "shrinkage" when baking. It still turned out delicious, but I think it's better to reduce the amount of butter in the recipe or increase the proportion of flour (and, accordingly, baking powder, eggs, etc.) What fat content of the cheese is the original recipe designed for?

lega, it's not about the fat content of the cheese, but about its consistency. The recipe lists hard cheese, but you used different types of cheese. In addition, it was not necessary to beat the dough with a blender. The girls have already found out empirically that when kneading with knives (with a blender), the dough is much thinner. Next time, you can grind the cheeses with a blender, and only then add everything else.
You don't need to change the recipe too much, just add flour to a normal consistency dough.
And the Gouda cheese that I use is 45% fat.
