Semi-sweet oat bread

Semi-sweet oat bread

Ingredients

Yeast 1.75 tsp
Wheat flour 345 gr
Hercules flakes 80 gr
Salt 1.5 tsp
Sugar 1.5 tbsp. l. brown
Rast oil 1.5. Art. l. peanut
Eggs 2 pcs.
Heat milk 220 gr.

Cooking method

  • Basic mode, size M, medium crust.
  • It would be possible to add seeds dried in a frying pan (half of the dispenser), it would be possible to grease with an egg and sprinkle with Hercules before Baking, but my sophistication does not like ...
  • The bread is delicious, incredibly, with a very tasty crust, and very fluffy ... The only thing I was too lazy to smooth the crest, and although the bread rose well, the surface was not smooth from above ...

Have you tried baking with oatmeal?
Do you think if you add oatmeal, should you add cereals?
Gasha
safoo, I haven’t tried the oven with oatmeal, because I don’t have it ... But I think it’s possible, you just need to carefully monitor the kolobok, you may need a different amount of liquid ... Flakes, in this case you do not need to add. .. You just replace them in the recipe for wasp flour ...

Flakes can be added anyway. They give the bread crumb not so much flavor as a different structure. Just when adding flour, the amount of flakes is taken less. Flour + flakes should not be more than 20% of the total flour mixture.

Did I understand correctly: if the recipe contains 325 grams of wheat flour and 80g of flakes, then I should add 60-65g of oat flour, plus 80 grams of flakes and 260 of wheat? or not right?
Lika
flour mixture is all loose (different flour, bran, flakes) that we put in the batch. For example 400 grams of flour + 100 grams of flakes = 500 grams of flour mixture.

The recipe contains 345 grams of flour + 80 grams of flakes = 425 grams of flour mixture.
80 g of flakes can be broken into oatmeal + flakes, but the total should not exceed 80 g for this recipe.
And yet, flour absorbs more water than flakes, it is imperative to keep an eye on the bun.

Practice has shown that flakes are better to use than flour

Thank you all for your answers !!!

Khoma, and the worse is oatmeal bread than cereal bread?

my son has a diet - he is not allowed wheat, rye, corn, rice. You can only oatmeal and barley, and millet.
So far, I spoil all the household members with wheat bread (thanks to the members of the forum), but I must also please the younger one, and at the same time not harm his health.

not worse, baking is more difficult, heavy bread turns out and does not rise well

Gasha, what should the bun in this bread be like? Like wheat?
Gasha
Crochet, no ... Due to the addition of flakes, the bun comes out not as smooth and round as wheat ... At first, it is generally shaggy, and refuses to absorb the flakes ... But as you push it with a spatula, it gets more and more correct. ..

I baked this bread

There was no fresh milk, so I had to use dry milk. Maybe that's why the crumb of the bread turned out to be dryish, crumbling. And I also made a note for myself that it is better to grind the flakes before kneading, since hard particles come across in the finished bread.

I also bake such bread, but I put more sugar and I use NORDIK oatmeal, those that are boiled for 1 minute. They give the bread a special tenderness.

And I bake oat bread like this: water -1 cup and 2 tbsp. l (measured);
wheat flour - 3 cups
salt - 1.5 teaspoon
butter-2 tbsp. spoons (but I baked with both olive and corn, it also rises very well and is delicious)
honey - 0.25 cups
powdered milk-2 tbsp. spoons (you can do without it, but you can replace it with an ordinary one, then there is less water)
oat flakes - 0.75 cups (I use what I have)
dry yeast - 2 tsp

I have a measuring cup 230 ml. Forgive those who don't like cups and spoons. And it's much easier for me when they are indicated in the recipe. Indeed, in all HP, cups and measuring spoons are balanced. And I confess honestly, in 2.5 years of using the bread maker, I failed bread only once. At that time I used Saf-Moment yeast, and usually I use Dr. Oetker or Lviv.
FAST mode.
The bread is sweetish, so it's better to use it for tea. Bon Appetit!
