Wheat-chestnut creamy bread

Ingredients

Wheat flour 310 g + 2 tbsp. l.
Chestnut flour 100 g
Old kefir 250 ml
Salt 1.5 tsp.
Honey 1 tbsp. l.
Vegetable oil 1 tbsp. l.
Butter 20 g
Yeast SAF-moment 1.5 tsp.
Protein from 1 egg, beat

Cooking method

  • We put all the products in the bread maker, turn on the Dough mode (by time 1.40).
  • The first proofing of the dough in cold cuts is not high.
  • An interesting feature of chestnut flour is that the bun should be somewhat denser than usual. With a soft kolobok, the top of the bread may settle.
  • We spread the dough, knead it, put it in a mold and put it on the second proofing in the oven at 30 * C. For the second proofing, hold the dough until it doubles in volume.
  • We bake in the oven at 180 * C, after a steady red crust, transfer to 165 * C and bring to readiness.
  • And we got such a handsome man !!! The top of the head was greased with olive oil.

Note

Inside, the bread is very soft, breathes!
The crust of the bread is thin and crispy. The color is gray.
The taste of bread is somewhat similar to buckwheat (with a low content of buckwheat flour).
Bon appetit to all

Whoa! Impressive! And I would have baked it if I knew where to get chestnut flour ... can you tell me?

Crochet, chestnut flour is in supermarkets. I bought for a long time in Eliseevsky in Moscow, picking up stocks.
Flour has one drawback - the price is biting

On the forum there are some of my recipes for bread with chestnut flour

Above, I placed a slice of chestnut bread - it turned out to be a soft, porous bread

Chestnut flour looks like this:
A sachet of 500 grams of flour.

Flour of very fine grinding, gray color.

Flour does not have gluten (gluten) at all, it is heavy - therefore, flour should be placed in the dough no more than 20-30% by weight of wheat flour.
My bookmark was 30% - the result is obvious!

I wonder what this flour is made of, chestnuts

It seems to me that the French will not lie, and the shaher-maher will do with flour
And chestnut flour costs decently - a 500 gram package (above) cost 156 rubles.

Fortunately, you need to put it in the dough in 80-100 grams - every five times and there is enough packaging, and we do not bake such bread every day

I ordered it there for sure, it is somehow wonderful from them, not where all the rest of the whole grain flour is in dietary goods, but chestnut flour was in the VIP chtoli, I don't remember exactly, well, it's easier to look at the search ...
