Ingredients

Wheat flour 350 g
Rye flour 150 g
Water (in my case, potato broth) 290 ml
Salt 1.5 tsp.
Sunflower seed oil 30 g
Dry yeast 1.75 tsp
Apple 1 PC.

Cooking method

  • Peeled the apple, cut it into small cubes (vinaigrette) and put it in a bucket in a potato broth. The weight of the apple is 90 grams (not essential).
  • Basic mode. Before baking, I had to turn it off (it did not rise enough) and leave for another 30 minutes, then the "Baking" program

Thank you . I didn’t add any sugar or honey, because the "New York rye" bread was taken as a basis, and it is sugar-free. And of course you can add, but for some reason I wanted it so ... without sugar.

I did this:

Oara for the night:
150g. rye flour, including 1 st. l. panifarina
150ml warm water
6d. pressed yeast
1.5h l. salt (I will add more next time)

dough
all dough
350g. wheat flour,
140ml. warm water
30g. salted oils.
half a coarsely grated apple

Knead in a combine. First, I beat the dough with water, then flour, then an apple with butter. The first ascent is 60 minutes, then in the form for another 60 minutes. Baked at 220C.

In the photo (I hope that it will open), you can see how the lower half has been punctured. Such airy bread.

By mistake (the cans were nearby) I made the dough with whole grain flour FOR. Dough 150g. rye + 200g. wheat. The rest is also. The crumb turned out to be more elastic, but just as tasty !!

It's scary to even approach the oven, baked in a slow cooker. I did everything according to the recipe, just added fresh dill, and the dough stood for only 30 minutes, but that was enough (still, if the kitchen is warmer than in the oven with the light on). The bread rested against the lid, so there was no need to turn it over. Baking mode 60 + 30 minutes. Of course there is no crust, but the crumb is just as airy. To the author for a win-win recipe

Good day! Thanks for the great recipe! I modified it a little. Since rye was only 80 grams, the rest was taken with whole grain wheat, I took wheat according to the recipe, + added 0.5 tbsp. l. sugar and 1 tbsp. l. rast. oils. But I slightly reduced the yeast, took almost 1.5 tsp. It turned out to be a very good, tasty and soft bread. I baked in Panasonic 2501, kneaded in pizza mode, then, after the first batch, turned it off and let it come up 2 times, baking for 58 minutes.
