Chocolate muffins with lemon filling

Ingredients

Dough
eggs 3 pcs
Sugar 1 glass
Butter at room temperature 100 g
Flour 1 or 3/4 cup
Sour cream or kefir 100 g
cocoa 4 teaspoons
baking powder 1 sachet
Filling
water 1 glass
sugar 1 glass
starch 3 tbsp. spoons
butter 50 g
yolks 2 pcs
lemon juice 1/4 cup
lemon peel 1 tbsp. the spoon

Cooking method

  • Cooking the dough. Beat eggs with sugar, add soft butter or margarine. Pour baking powder or 1/2 teaspoon of soda into kefir. Let it stand for the soda to react with the kefir. Add kefir to the sugar-egg mixture, flour, cocoa and vanilla. Beat everything well with a mixer. The dough is made like homemade thick sour cream.
  • Prepare the filling: In a saucepan, mix the starch with cold water, add sugar, lemon juice and cook over low heat, stirring constantly. When the mass has thickened, cool it slightly and add the raw yolks of the eggs, while trying to stir quickly so that the yolks are not boiled. Add lemon zest and oil. Beat everything well. We put the mixture in a water bath and again warm everything up, stirring constantly.
  • We spread the dough into molds, filling them 1/2, put the filling on top, 1 teaspoon each and again cover with the dough. The dough should fill the molds by 2/3 of the volume.
  • We bake at 180 degrees. 20-25 minutes.
