Brazilian carrot cupcake

Ingredients

Flour 260 g
Salt pinch
Sugar
(less possible,
since this amount is calculated for sweets)
320 g
Vegetable oil 100 ml
Eggs 3 pcs.
Baking powder 1 tbsp. l.
Raw carrots 300 g
Glaze:
Milk 250 ml
Sugar
(less possible)
200 g
Cocoa (powder) 4 tbsp. l.
Starch 1 tbsp. l.
Salt pinch

Cooking method

  • Beat eggs, peeled and diced carrots, vegetable oil and salt in a blender / processor.
  • In a bowl, mix sugar, flour and baking powder. Combine both mixtures and mix well.
  • Grease a mold with butter and sprinkle with flour. The oven is preheated to 170 gr. oven. Until dry sticks (about 45-50 min.)
  • Prepare the glaze at this time. Mix all the ingredients well and put on low heat until thickened. Allow to cool.
  • When the cake is ready, remove from the mold and allow to cool slightly. Cover with glaze.
  • Cut into squares.
