Bird's milk cake (on gelatin)

Ingredients

Biscuit:
Wheat flour 1.5 tbsp.
Sugar 1/2 tbsp.
Yolks 4 things.
Condensed milk 2/3 banks
Sour cream 1 tbsp. l.
Baking powder 1 tsp
Souffle:
Protein 6 pcs.
Sugar 150 g
Lemon acid pinch
Gelatin sachet
Butter 2 tbsp. l.
Condensed milk 3 tbsp. l.
Vanilla sugar sachet

Cooking method

  • Biscuit:
  • I ground the eggs with sugar until white, added sour cream, baking powder, condensed milk - beat with a mixer. Stir in flour. Baked for 30 minutes. She took it out of the mold, cooled it on a wire rack and cut it into 2 cakes.
  • Souffle:
  • I soaked the gelatin in a bowl (before starting to make the biscuit) and completely dissolved. Sugar was poured into 100 ml of water and brought to a boil (in the sense of the necessary bubbles). I added gelatin and cooked the syrup until the string of caramel begins to reach for the spoon. Added citric acid to the syrup (literally a couple of granules). The whites were cooled in the refrigerator while baking the biscuit. Beat the cold whites until dense foam, add vanilla sugar and beat again. She poured the boiling syrup into the protein mass in a thin stream, beat it for another 30 seconds. Mixed soft butter with condensed milk, and yes! whipped with a mixer with protein cream. The proteins instantly settled down - the consistency of thick sour cream turned out.
  • Assembly:
  • I decided not to get upset and collect the cake anyway! Soaked the cakes with a mixture of cloudberry liqueur and pineapple syrup. She put the cake in a mold, poured out the protein cream, sent the second cake to sail (she drowned it a little, but not completely) and put the cake in the refrigerator. I cooked the icing from dark chocolate, and after 15 minutes I put the cake out of the mold on a tray and covered it with icing.
  • The soufflé is completely frozen. If it were not for the trick with the mixer, its layer would have been very decent and most likely would have been enough for candy. [/ Quote]

Note

Hello everyone!
I decided to make the first in my life "Bird's milk". Only I haven't bought agar-agar yet, so I tried to make it with gelatin. I have combined several different recipes.
